Super Easy Carrot Cake Recipe

I made this last year/new year. Should have posted but you know how I procrastinate *sigh*.

I promise you this recipe is super simple. I made some modifications to the original recipe which I have linked below.

I added nuts (cashew and almonds), substituted applesauce for unsweetened yoghurt and reduce the amount of sugar.

Super Easy Carrot Cake Recipe

Ingredients
  

  • 2 cups Wheat flour (or all purpose) Spoon and leveled
  • 2 teaspoon Baking powder
  • 1 teaspoon Baking Soda
  • 1 1/2 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Nutmeg
  • 1/2 teaspoon Salt
  • 3/4 cup Vegetable Oil
  • 4 large Eggs Room temperature
  • 2/3 cup Light Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1/2 cup Natural Unsweetened yoghurt
  • 1 teaspoon Vanilla Extract
  • 3 cups Grated Carrots Lightly packed, approx. 2 or 3 large carrots
  • 1/4 cups Chopped Almonds optional
  • 1/4 cups Chopped Cashew Nuts optional

Instructions
 

  • Preheat Oven 350F. Grease baking pan with butter and dust with flour. Pan size: two small pans or 1 large springform pan
  • In a large bowl, whisk together the: flour, baking powder, baking soda, cinnamon, ginger, nutmeg and salt until well combined. Set aside
  • In another bowl, whisk together: oil, eggs, brown sugar, granulated sugar, yoghurt and vanilla extract until fully combined.
  • Add grated carrots and nuts into wet ingredients and mix (do not over mix)
  • Pour wet ingredients into dry ingredients and mix with a whisk or spatula. Take care not to over mix
  • Pour batter into pan(s) and bake until the top of cake is set and a tooth pick inserted into the center comes out clean. This should take about 30 - 45mins
  • Remove and allow to cool. Cut into desired size and ENJOY!

Notes

Once I place the pans into the oven, I usually reduce the temperature (slightly). Just to avoid it from burning before it's cooked thoroughly. 
Original recipe had 1 and 1/2 cups of light brown sugar and 1/2 cups of granulated sugar.
I made some modifications to the sugar measurement as I'm not a fan of  'sweeet cakes'. 
Almonds and cashew nuts do not have to be finely chopped. I chopped one (almond/cashew nut) into two small pieces.

Easy Marble Cake Recipe

This is a quick and easy marble cake recipe using. The best part is you can use OIL.

Ingredients
  

  • 1 3/4 cup Plain Flour
  • 1 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Oil
  • 4 Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Milk
  • 2/3 cup Sugar
  • 3 tablespoon Cocoa Powder

Instructions
 

  • Preheat the oven to 350F or 175C
  • Grease baking pan (9'' pan will do). You can do this with butter or oil
  • In a bowl, mix the flour, baking powder and salt. Set Aside
  • In another bowl, add the sugar, egg and oil and mix until creamy/pale yellow
  • Add vanilla and mix for about 30secs
  • Add milk and mix
  • Add flour mixture from the other bowl and mix thoroughly
  • Reserve 1 cup of batter and pour the remaining in the baking pan
  • Add cocoa powder in reserved batter and mix thoroughly. If you feel the cocoa batter is too thick, you may add 2 or 3 tablespoons of milk.
  • Pour the cocoa batter in the pan. Using a knife, create swirls (mixing the coco and vanilla batter)
  • Bake for about 30 to 50minutes or until an inserted toothpick comes out clean

Notes

Easy Marble Cake Ingredients

For this recipe, I used Ideal (tin) Milk. You can substitute with powdered milk. Simply Measure 1/2 cup of water and add 3 tablespoons of powdered milk. Mix until the powdered milk is fully dissolved.
I've made this cake with both (tin milk and powdered milk) and it was amazing. 
For oil, you can use any vegetable oil you have at hand. For this recipe I used Frytol (... I've also used Aya Oil too).
Cocoa Powder, I've tried two brands: 
  • Brown Gold Natural Cocoa Powder
  • Golden tree: Royale Natural Cocoa Powder

NB: I have both on the recipe image but you can use whichever one you like :). (I did not combine both).
Flour measurement, you will need 1 3/4 cups of flour. If you do not have 3/4 cup, you may use 1/4 thrice (1/4 + 1/4 + 1/4).
Original recipe called for 1 1/2 cup of sugar but I decided 1 cup 2/3 cup would be suitable for this quantity of cake. You may add more sugar (based on your preference).
My cake cracked (from the photos). So my tip here is to reduce the temperature slightly when you place your pan in the oven.
